CHICORY BEVERAGES RECIPIES

HOT CHICORY BEVERAGES:

Ground Roasted Chicory Coffee Beverage

If you want to start reducing your caffeine intake from your morning coffee or if you want a boost of caffeine with your chicory, you can try brewing half coffee half chicory. Just switch out a spoon of your coffee grounds with a spoon of chicory grounds and brew as usual. “New Orleans” style chicory coffee blends contains about 30% of chicory and 70% of coffee. Milk and sweeteners can be added.

Instant Chicory Beverage

For people “on the run” who have no time to brew chicory. There are instant , soluble chicory blends) available on the market. Add hot water (6 oz or 180 ml) to 1-2 spoonfuls of instant chicory. Stir and enjoy. Sweeten and add milk/creamer if needed.

Chicory Tea Beverage

For tea drinkers we recommend to add 1/2 – 1 teaspoon of chicory to your loose leaf tea. Add in some cinnamon, sweetener, and/or milk to cut the bitterness. It blends well with chai tea, black , green tea, and yerba mate.

CHICORY–RECEPIES
1. Chicory salad with oranges and red onions
Ingredients :
  • ►1/3 cup red-wine vinegar
  • ►1 tablespoon sugar
  • ►1 1/2 teaspoons salt
  • ►1 medium red onion, sliced crosswise 1/8 inch thick and separated into rings
  • ►2 medium navel oranges
  • ►2 teaspoons whole-grain mustard
  • ►1 tablespoon low-fat chicken stock or low-sodium fat-free chicken broth
  • ►1/4 teaspoon black pepper
  • ►1 tablespoon olive oil
  • ►1/2 lb chicory (curly endive), stems and center ribs discarded and leaves torn into bite-size pieces (10 cups)
Preparation :
►Bring vinegar, sugar, and 1 teaspoon salt to a boil in a small saucepan, stirring
frequently until sugar is dissolved, then remove from heat.

►Cook onion in a saucepan of boiling salted water until crisp-tender, about 4 minutes,
then drain in a colander. Rinse under cold water and drain again. Stir onion into
vinegar mixture and marinate 10 minutes.

►While onion is marinating, cut peel and white pith from oranges with a sharp knife, then
cut oranges crosswise into 1/4-inch-thick slices.

►Drain onion in a sieve set over a salad bowl, reserving marinade and onion separately.
Whisk mustard, stock, remaining 1/2 teaspoon salt, pepper, and oil into marinade. Add
chicory, onion, and oranges and toss with dressing. Serve immediately.

2. Chicory salad with walnuts and parmesan
Ingredients :
  • ►1/2 cup coarsely chopped walnuts
  • ►1 tablespoon sherry vinegar
  • ►3 tablespoons walnut oil
  • ►1/2 teaspoon Dijon mustard
  • ►Salt and freshly ground black pepper
  • ►1/2 pound chicory, or other leafy green
  • ►1/4 cup shaved Parmesan
Preparation :
►In a dry skillet, toast the nuts over medium-high heat until fragrant,
about 2 minutes. Set aside to cool.

►In a small bowl, whisk together the vinegar, oil, mustard, salt and pepper, to taste.

►In a large bowl, toss the chicory with the dressing. Put onto serving plates
and top with walnuts and shaved parmesan.

3. Roman Chicory salad – Puntarelle
Ingredients :
  • ►Chicory – fresh or Radicchio rosso
  • ►Anchovies
  • ►Garlic
  • ►Olive oil
  • ►Vinegar
Preparation :
►Once you have washed, picked over, and shredded your chicory (puntarelle) , grind
one or more cloves of garlic in a mortar with a few rinsed, boned anchovies (ideally the
kind packed in salt, though you can used canned anchovy filets packed in oil too).

►When the two are ground to a smooth paste work some good vinegar into the mixture
to dilute it, and use the sauce thus obtained to dress your salad.
